Squeeze the Day Cookie Sandwich

Perfect for summer time! This key lime pie inspired cookie sandwich is filled with fresh limes, graham cracker crumbs and a tangy stable buttercream.

Note: Shelf stable means something different in each state. This does include salted butter and the ratio of butter to everything else is small. Please reach out if you have any questions.

I've also included a modification if shelf stable does not apply to you.
